Method
 

Preparation
  1. Chop spinach and bell peppers.
    Crumble feta cheese.
Cooking Process
  1. 1. Heat a non-stick skillet over medium heat.
    2. Add a splash of olive oil or spray with cooking spray.
    3. Sauté bell peppers for 2-3 minutes until soft.
    4. Add spinach and cook until wilted, about 1 minute.
    5. Whisk eggs in a bowl, season with salt and pepper.
    6. Pour eggs into the skillet, stirring gently.
