Step 1: Sear the Chicken
- In a large pot over medium-high heat, add olive oil. Sear diced chicken with salt, pepper, and Italian seasoning until golden brown. Remove and set aside.
Step 2: Sauté the Aromatics
- In the same pot, sauté onions until translucent. Add garlic and cook for 30 seconds.
Step 3: Add Pasta and Broth
- Add dry pasta and chicken broth. Bring to a boil, then cover and reduce heat to simmer for 10–12 minutes.
Step 4: Stir in Chicken and Cream
- Return chicken to the pot. Add heavy cream, mozzarella, and parmesan. Stir until creamy.
Step 5: Add Spinach and Serve
- Stir in spinach until wilted. Serve hot with extra parmesan if desired.
