  • 2 tablespoons Fresh Basil Finely chopped
  • 2 tablespoons Extra Virgin Olive Oil Plus more for drizzling
  • 1/2 teaspoons Sea Salt To taste
  • 1/4 teaspoons Black Pepper Freshly cracked
  • 6 slices Ciabatta Bread Or any rustic Italian bread

Method
 

Preparation
  1. Toast the bread slices in a toaster or under the broiler until golden brown.
  2. In a bowl, mix diced tomatoes, garlic, basil, olive oil, salt, and pepper.
  3. Optional: rub the toasted bread with a raw garlic clove.
  4. Spoon the tomato mixture generously over each bread slice.
  5. Drizzle with a little more olive oil before serving.
