Preparation
- Start with boneless, skinless chicken breasts. Rinse and pat them dry. Cut them into bite-sized pieces for even cooking.
Marination
- In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Add the chicken pieces and toss to coat. Let it marinate for at least 30 minutes.
Cooking
- Turn on your Blackstone griddle and preheat it to medium-high heat. Once hot, add the marinated chicken to the griddle. Spread it out evenly and let it cook for about 5-7 minutes without stirring.
- Use a spatula to flip the chicken pieces. Cook for another 5-7 minutes until golden brown and cooked through. The internal temperature should reach 165°F.
- If you like, toss in some bell peppers and onions during the last few minutes of cooking for extra flavor and color.
- Remove the chicken from the griddle and let it rest for a couple of minutes. Serve it hot with your favorite sides and enjoy the deliciousness!
